ABOUT

CIDER

Apple Cider is an alcoholic beverage that is made by the controlled fermentation of apple juice. This juice can be from eating apples or, better from, cider apples which are classified as Sharp (like Crimson King), Bittersharp (like Kingston Black), Sweet (Sweet Coppin) and Bittersweet (like Yarlington Mill).

With such a large varieties of apples available, the cider mills and cider makers have an opportunity to create a special style that they would like and leave their own signature on the cider for their customer. This creates ciders that span from traditional to commodity to contemporary.

A cider making process that has evolved over more than 2000 years is strictly followed – harvesting apples when ripe to get the full spectrum of flavours and optimal sugar levels, post sort pressing, fermentation in oak or inox tanks to convert sugar into alcohol, maturation from few weeks to few years, blending to strike the right balance of flavours and aromas, and filtration to remove the cloud/ haze and reveal the bright cider.

The alcohol content in Cider can vary from 1.2% to 8.5% ABV in the traditional English ciders. Around the world, this can go up to 12%. While under the UK law, Cider must contain at least 35% apple juice most grower producers are focussing more and more on 90% natural juice.

Cider is very popular in the United Kingdom, especially in the West Country. United Kingdom is home to the largest cider-producing companies and has the world’s highest per capita consumption. Around the world, Cider is witnessing a renaissance led mainly by changing consumer preferences, the consumption shows upward trends in South Africa, Canada, Australia and soon in India…

History

The glorious history of Apple Cider can be traced back almost 2000+ years. As apples moved west along the Silk Route, evidence suggests that the early Celtic Britons were drinking a primitive form of cider. Successive invasions meant that superior apples types were introduced in Great Britain. In the 19th century, the techniques of making Cider were perfected in England, France and Spain. With better orchard techniques and pressing technology, Cider gained in popularity. Children were baptised with Cider, the King of England H.M. Charles I preferred Cider to wine.

The Americans refer to unfiltered apple juice as apple cider and usually drink it hot with a cinnamon stick. But a request for cider at a bar in any other part of the world will get something far better: a drink as dry and bubbly as champagne and as cold and refreshing as beer. Only in America, you will have to ask for hard cider to distinguish it from the non-alcoholic version.

SHEPPY'S

IMPORTED CIDER

Sheppy’s cider is an award winning cider company who have been proudly creating traditional craft blends on their farms in the heard of Somerset for over 200 years. It was in 1816 that David Sheppy’s ancestors picked and pressed the first batch of apples on their Somerset farm and the rest, as they say, is history.

Two centuries later, we’re still championing the same method to make cider that were used generations ago, balanced with the very best of modern technology. From apples to bottles our master of cider David Sheppy is involved with every drop of cider that bears the Sheppy’s name. Experience, insistence and knowledge are key to all out ciders and nothing leaves the family farm in Somerset without David Sheppy’s signature on it. It’s his personal guarantee of quality and provenance. Cider has always been low in alcohol because the apples themselves are low in sugar. Even the sweetest apples contain much less sugar than grapes, for instance. In a vat of cider, the yeast eat what sugar there is, turning it into alcohol and carbon dioxide, but once the sugar is gone, the yeast die off for lack of food, leaving behind a fermented cider that contains only about 4 to 6 percent alcohol. It’s naturally gluten-free!
